Kimchi & Sourdough

For those that follow Mark’s instagram account [markhlondoncorfu] you’ll know he bakes traditional organic homemade sourdough bread (just flour, water & air + a pinch of Himalayan salt) having done a course with Vanessa Kimble to, ‘bring back traditional sourdough baking to Corfu.’ Mark’s principle is to bake one for home, and one or two for the wonderful people in his, and his wife Saskia’s, lives – oh, plus quite often their 2 children too of course.

Mark also makes homemade Kimchi – which is a different process altogether albeit following on in the ‘fermented’ factor, and is given to specific people who love Kimchi. Anyway, the highest compliment received today from Jae at ‘Petite Coree’ [a fusion of European and Korean food] in West Hampstead. Jae trained in the hallowed kitchens of Nobu and Hélène Darroze…  Now, enough of all that –  back to the day job! 🙂
